    That’s a lot to answer!
Plasmas have a slightly better picture but LCDs tend to be a far better value over all. I would definitely go LCD at 32″.
The PS3 does 1080P bluray DVDs so get a 1080P if you can and use the HDMI cable to get 1080P. The P stands for progressive scan and means that it draws the entire picture (every horizontal line) every time instead of 1080I, interlace, which only draws the even then the odd lines in succession. The bottom line is that P is better than I. 720P is even better than 1080i if that shows you the value better.
Getting a higher contrast ratio gets you a better picture in regards to blacks and details in shadows of the image.
BEWARE that some TVs that have image enhancement cause a lag and are NOT good for gaming. Make sure that the TV doesn’t have image enhancement that causes lag OR that it can be shut off. The sales people will look at you with a stupid look if you bring this up because they rarely are aware of it. I know this sounds crazy, but it’s almost impossible to tell without actually trying it, so bring your game system with you to try before you buy.
EDIT: To the poster below: Of course for breavity I didn’t detail the reasons why 720P is almost always better than 1080i. However, every study I’ve ever read (I’m in the Home Theater industry) says that all other things being equal, 720P is better than 1080i for many reasons. The most important to me is motion “blur” or “stepping” during high motion scenes.

Mr. Ranting has given you most of the details….
1500:1 is a better contrast ratio than 700:1 the higher the first number, the blacker the blacks will be and the image will look better. For gaming you need to get one with 5ms response time or less.
I have a PS3, a Samsung 23″ LCD (1366×768 pixels) which is 3000:1 and 5ms response. GTA looks great as does Motorstorm and most games. There is some flickering on Assasins creed though.
    Blu-Rays look fantastic through it.
    I wouldn’t buy a plasma screen.
I disagree with what Mr. Ranting said about 1080i being worse than 720p, it depends on the TV and connections.
On a real good TV there is very little noticably different between a1080i, 1080p and a 720p but we’re talking about really expensive TVs.
Samsungs were developed with the Xbox people at microsoft for optimum game performance.
    Mine has a GAME mode.
You’ll have to see for yourself in a shop.
